  • 1 tablespoon sugar
  • 1 package (1/4 ounce) quick-rise yeast
  • 1 teaspoon sea salt
  • 3-1/4 to 3-3/4 cups all-purpose flour
  • 1-1/4 cups water
  • 1/4 cup olive oil
  • TOPPING:
  • 1 large egg white
  • 1 tablespoon water
  • Coarse sea salt

Directions

  1. Preheat oven to 325°. In a large bowl, mix sugar, yeast, salt and 2 cups flour. In a small saucepan, heat water and oil to 120°-130°; stir into dry ingredients. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rest 10 minutes.
  2. Divide dough into 20 portions. On a lightly floured surface, roll each portion into a14-in. rope. Place ropes 1 in. apart on greased baking sheets. Cover and let rise in a warm place until almost doubled, 15-20 minutes.
  3. In a small bowl, whisk egg white with water; brush over tops of dough. Sprinkle with coarse sea salt. Bake until light brown, 20-25 minutes. Remove from pans to wire racks. Serve warm.

  • 1 cup chopped carrots
  • 3 garlic cloves, peeled
  • 3 tablespoons olive oil, divided
  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 tablespoon water
  • 1 teaspoon hot pepper sauce, such as Tabasco
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup sunflower kernels
  • Assorted fresh vegetables and pita wedges

Directions

  1. Preheat oven to 400°. Place carrots and garlic in a rimmed baking sheet. Drizzle with 2 tablespoons oil; toss to coat. Roast until carrots are soft, 15-20 minutes. Cool on a wire rack.
  2. Transfer carrot mixture to a food processor. Add garbanzo beans, lemon juice, tahini, water, hot sauce, salt and spices. While processing, add remaining 1 tablespoon oil. Process until the desired consistency is reached. Transfer to a serving dish. If desired, drizzle with additional oil and hot sauce. Top with sunflower kernels. Serve warm or chilled with vegetables and pita wedges.

  3. Roll out remaining pastry; make a lattice crust. Trim, seal and flute edges. In a small bowl, whisk egg yolk and water; brush over lattice top.   • 20 uncooked lasagna noodles
  • 1 carton (32 ounces) whole-milk ricotta cheese
  • 2-1/2 cups shredded Italian cheese blend, divided
  • 2 cups shredded part-skim mozzarella cheese
  • 6 large eggs, beaten, divided use
  • 4 teaspoons Italian seasoning, divided
  • Oil for deep-fat frying
  • 2-1/2 cups panko bread crumbs
  • 1 jar (24 ounces) marinara sauce, warmed
  • 1 jar (15 ounces) Alfredo sauce, warmed

Directions

  1. Cook lasagna noodles according to package directions for al dente. In a large bowl, combine ricotta, 1-1/4 cups Italian cheese blend, mozzarella, 2 eggs and 3 teaspoons Italian seasoning. Drain noodles. If desired, cut off ribboned edges (discard or save for another use). Spread about 1/4 cup filling on each noodle. Starting with a short side, fold each in thirds. Place all on a parchment-lined baking sheet, seam side down. Freeze just until firm, about 1 hour.
  2. In an electric skillet or deep fryer, heat oil to 375°. In a shallow bowl, mix bread crumbs, 2/3 cup Italian cheese blend and remaining 1 teaspoon Italian seasoning. Place remaining 4 eggs in a separate shallow bowl. Dip lasagna bundles into eggs, then into crumb mixture, patting to help coating adhere.

  • 1 package white cake mix (regular size)
  • 1-1/3 cups rainbow sprinkles, divided
  • 1 package (1 ounce) freeze-dried strawberries
  • 3 to 12 drops blue food coloring
  • 1/4 cup baking cocoa
  • 2 cartons (24.3 ounces each) Philadelphia ready-to-serve cheesecake filling
  • 2 cans (16 ounces each) cream cheese frosting
  • 2 tablespoons rainbow sequin sprinkles

Directions

  1. Preheat oven to 350°. In each of 3 small bowls, whisk 1-1/3 cups milk and 1 package pudding mix for 2 minutes. Refrigerate, covered, while baking cake layers.
  2. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease paper. Prepare cake mix batter according to package directions, folding 2/3 cup sprinkles into batter. Transfer to prepared pans. Bake and cool as package directs.
  3. Using a long serrated knife, trim tops of cake layers to level. Crumble trimmings; transfer to a parchment-lined baking sheet. Bake at 350° until crisp but not browned, about 5 minutes. Cool completely on pan on wire rack.

  6. Remove strawberry-layered pan from freezer; spread chocolate pudding over top. Return to freezer for 3 hours. Meanwhile, stir remaining 2/3 cup sprinkles into cooled cake crumbs.
  7. Remove rims from springform pans; discard plastic. Place strawberry-layered cake on a serving plate; top with blue-layered cake. Frost top and side with cream cheese frosting. Gently press crumb mixture into frosting on side of cake; sprinkle with sequins. Freeze until ready to serve. Remove 10 minutes before cutting.

  2. For the ice cream, in a large heavy saucepan, whisk egg yolks, sugar and salt until blended; stir in milk. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately.
  3. Quickly transfer to a small bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream and vanilla. Press waxed paper onto surface of custard. Refrigerate several hours or overnight.
  4. Stir bourbon into custard. Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer’s directions, adding cornflakes during the last 2 minutes of processing. (Refrigerate any remaining mixture until ready to freeze.)
  5. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze until firm, 2-4 hours.

I was inspired by the innovative idea but wanted to add my own spin by topping the biscuits with apple butter. Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 tablespoon pumpkin pie spice
  • 2-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 3/4 cup canned pumpkin
  • Apple butter, optional

Directions

  1. Preheat air fryer to 370°. In a large bowl, whisk the first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. Add pumpkin; stir just until moistened.
  2. Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. In batches, place in a single layer 1 in. apart in greased air fryer. Cook until golden brown, 7-9 minutes. If desired, serve with apple butter.

Ingredients

  • 1 pound red potatoes
  • 2 teaspoons canola oil
  • 1/4 cup finely chopped onion
  • 1/4 cup frozen peas, thawed
  • 1 tablespoon sugar
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 20 egg roll wrappers
  • Cooking spray
  • Mango chutney

Directions

  1. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, just until tender, 10-12 minutes. Drain and cool. Peel potatoes and chop; set aside.
  2. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until crisp-tender, 3-4 minutes. Add potatoes, peas, sugar, garam masala, chili powder and salt; cook and stir 5 minutes longer. Remove from heat; cool slightly.
  3. Cut egg roll wrappers in half lengthwise. Place about 1 tablespoon potato filling about 1/2-in. from corner of each strip. (Cover remaining wrappers with a damp paper towel until ready to use.) Moisten wrapper edges with water. Fold one corner of wrapper over filling, forming a triangle. Fold triangle over, forming another triangle. Continue folding, like a flag, until you reach the end of the strip. Brush end of wrapper with water and press onto triangle to seal. Repeat with remaining wrappers and filling.
  4. Preheat air fryer to 350°. In batches, place samosas in a single layer in greased air fryer; spritz with cooking spray. Cook until golden brown, 7-8 minutes, turning once. Serve warm with chutney.

  • 2 cups shredded cooked chicken
  • 1-1/4 cups shredded Monterey Jack cheese or pepper jack cheese, divided
  • 1-1/4 cups shredded sharp cheddar cheese, divided
  • 1/2 cup hominy or whole kernel corn, rinsed and drained
  • 1/2 cup canned black beans, rinsed and drained
  • 1 can (4 ounces) chopped green chiles
  • 1 tablespoon chili seasoning mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 flour tortillas (6 inches), warmed
  • 1 cup enchilada sauce
  • Sour cream, guacamole, salsa and limes

Directions

  1. Do not preheat air fryer. In a large bowl, combine chicken, 1/2 cup Monterey Jack cheese, 1/2 cup cheddar cheese, hominy, beans, chiles and seasonings. Line air fryer basket with foil letting ends extend up side; grease foil. Place 1/4 cup chicken mixture off center on each tortilla; roll up. In batches of 3, place in air fryer, seam side down. Top with half the enchilada sauce; sprinkle with half the remaining Monterey Jack and cheddar cheeses.
  2. Cook at 350°, until heated through and cheeses are melted, 10-12 minutes. Repeat with remaining ingredients. Serve with toppings of your choice.

  • 2 pounds medium Yukon Gold potatoes, cut into 1/4-inch thick slices
  • 2 tablespoons olive oil, divided
  • 2 poblano peppers
  • 4 medium ears sweet corn, husked
  • 6 green onions
  • 2/3 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 cup crumbled Cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1-1/2 teaspoons grated lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 5 minutes. Drain potatoes and toss with 1 tablespoon oil.
  2. Grill poblanos, covered, over high heat until skins are blistered and blackened on all sides, 8-10 minutes, turning occasionally. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat.
  3. Meanwhile, brush corn with remaining 1 tablespoon oil. Place potatoes in a grill basket. Grill corn and potatoes, covered, over medium heat until tender and lightly browned, 12-15 minutes, turning occasionally. Cool slightly. Grill green onions until blackened, 5-6 minutes. Cut into 1-in. pieces and place in a large bowl. Peel off and discard charred skin from poblanos; remove stems and seeds. Cut peppers into 1/2-in. pieces and add to onions. Cut corn from cobs; add corn and potatoes to peppers.
  4. In a small bowl, whisk sour cream, mayonnaise and lime juice until blended; stir in cheese, cilantro, zest, salt and pepper. Add to potato mixture, stir to coat. Refrigerate, covered, at least 1 hour before serving. If desired, top with additional Cotija cheese, cilantro and serve with lime wedges.
