My fun twist on typical pizza is an excellent way to use up leftover pesto. And since it’s loaded with protein-rich chicken and black beans, it’s hearty enough to satisfy everyone! —Taste of Home Test Kitchen, Milwaukee, Wisconsin

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 prebaked 12-inch pizza crust
  • 1/4 cup prepared pesto
  • 1 large tomato, chopped
  • 1/2 cup canned black beans, rinsed and drained
  • 1 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Directions

  1. In a large skillet, cook and stir chicken in oil over medium heat 10-15 minutes or until no longer pink.
  2. Place the crust on a lightly greased 12-in. pizza pan. Spread with pesto; top with the chicken, tomato, beans and cheeses. Bake at 400° for 10-12 minutes or until cheese is melted.

Do you cook chicken before putting it on pizza?

To ensure the chicken is cooked all the way through, you’ll definitely want to cook chicken before putting in on pizza.

Do you put cheese on pizza first or last?

After covering your crust with sauce, put cheese on pizza first, followed by any additional toppings. This allows the cheese to bubble up under the toppings, and gives toppings direct heat so they'll cook up more crisp, and not soggy.
